is it possible to have activated the paging function in the shop setting, and not showing the paging if I add a category to a page or post?

The terminology used on the GetShopped.org site is a little hazy. The "Single / Blogger" license is definitely for a single site only. It is not clear wether the "Business" license can be used across multiple sites - I suggest you contact Instinct to find out.
